Mexico's capital, a quintessential stronghold for traditional Mexican cuisine, also has become a city where experimental chefs at top restaurants resurrect ancient dishes for an evolving nueva cocina Mexicana. Basic Mexican food is simple -- consisting of tortillas, beans, chiles, squash and tomatoes -- similar to before Europeans arrived. Staples of cocoa and vanilla, garlic and onions, olives and citrus add to variations. Although many dishes have piquancy, most Mexican favorites aren't incendiary when served. Chiles and sauces add the picante flavor, and restaurant tables inevitably provide such condiments. Traditional tortillas are made from corn cooked in water and lime, ground into grainy masa dough, pressed into thin cakes, and finished off on sizzling griddles. Bread rather than tortillas may be offered to travelers in some restaurants, but tortillas are always on hand. The tortilla is the foundation of several Mexican dishes, including the humble enchilada, becoming far more elaborate of late with cheese, chicken, pork, or even seafood fillings and a multitude of toppings. For the day's main meal, restaurants often offer a multicourse blue-plate special called comida corrida. Most dining enclaves do not have non-smoking sections, but many dining spots are open-air. More cultures have lived in the Mexico City area than anywhere else within the Northern Hemisphere, resulting in an unsurpassed variety of cuisines and food preparation styles.
